1. Prepared a tomato puree, vegetable stock and keep it aside.
2. Chopped carrots, jalapenos and tomatos in diced and keep it aside.

Ingredients

For the Cookies
225 gr. (2 sticks) unsalted butter, softened
200 gr. (7.5 ounces) farmer cheese (cottage/ricotta-style cheese)
2 tablespoons sour cream
260 gr. (2 cups) all-purpose flour, plus additional for rolling cookies out
1/4 teaspoon salt
Raspberry Jam or preserves
Milk, for brushing cookies
Powdered sugar, for dusting

Preparation

1. Cream butter in a large bowl with an electric mixer until smooth. Force cheese through a sieve right onto creamed butter and stir it in. Add the sour cream and combine the mixture well.
2. Whisk or sift together flour and salt in a separate bowl and gradually blend it into the cheese mixture. Wrap the dough in plastic and chill it for at least 3 hours.
3. Preheat oven to 200 ° C (400 ° F). Roll one-fourth of the dough out very thinly on a floured surface and chill the remaining dough until it is to be used.
4. Cut the dough into 8 cm (3-inch) squares and put about 1/2 teaspoon jam or preserves in the center of each. Fold the dough in half on the diagonal, pressing firmly down to seal the two sides around the jam. Roll the triangle into crescents, starting at the wide end. Arrange crescents on a baking sheet (they won’t expand terribly much, so just an inch or so between them is fine), brush them lightly with milk and bake them for 15 minutes, until they are golden.
5. Transfer the cookies to a wire rack and dust them with powdered sugar. Continue making cookies in the same manner until all the dough is used.

Creamy ricotta and spinach spaghetti

Ingredients

150g spaghetti,
1 x large onion (chopped),
1 x garlic clove (minced),
200g spinach leaves,
125g ricotta (I use Galbani),
1 x tbsp of toasted pine nuts,
Salt and pepper.

Preparation

1. Place a pot of water on the heat and when it boils add salt, spaghetti and cook for 9 minutes or until ‘aldente’,
2. Whilst the pasta is cooking, place a non stick pan on the heat and gently cook the onion and garlic until soft,
3. Turn the heat down on the pan, and add the spinach and place the lid on top for a minute or two,
4. Stir the ricotta into the spinach mix, place the lid back onto the pan and set aside off the heat until the pasta is ready,
5. Drain the pasta and then mix in the spinach and ricotta mix,
6. If you decide on the pine nuts, simply toast them in a non stick pan until they start turning golden,
7. Enjoy with a grating of parmesan (optional), chilli oil (optional) and a nice glass of chilled white wine.

There are many health benefits of Chrysanthemum, and the ” golden flowers ” are used in traditional Chinese medicine to treat various internal and external health issues.

You can serve this soupy Golden Chrysanthemum Chicken dish which has a slight floral aroma with a refreshing taste for your Chinese New Year feast.

Ingredients

1 medium Chicken
2 tbsp Chrysanthemum flowers
6 Red dates
2 small Snow fungus
1.7 litres Water
3-4 tsp Salt
Pepper to taste

Preparation

1. Soak Chinese herbs in water till soft.
2. Discard base from snow fungus when soft and set aside.
3. Remove unwanted chicken parts like neck, innards and fats. Separate chicken feet and cut off nails.
4. Blanch chicken and feet in boiling water. Drain. Boil water in Thermos Shuttle Chef ® inner pot and cook chicken and feet for about 5 mins. Add dates and fungus and cook for another 5 mins.
5. Add chrysanthemum, cover pot and turn off heat.
6. Transfer to outer pot and let it brew for about 2 hrs.
7. Heat up inner pot just before serving and add seasonings, and your Golden Chrysanthemum Chicken is ready to be on the table.
8. * For slow-cooker: Follow steps 1 to 3, then blanch your chicken and add into water with dates and fungus and leave it to cook overnight on auto. Throw in chrysanthemum about an hour before serving.

Here’s a way to get great flavor, fast.   This quick-cooking skillet dish features strips of sautéed chicken with mushrooms, green onions and grape tomatoes.

Ingredients

2 tablespoons olive oil
1 1/4 pounds skinless, boneless chicken breast halves, cut into thin strips
1 package (8 ounces) sliced fresh mushrooms (about 2 1/4 cups)
1 clove garlic, minced
1 pint grape tomatoes (about 2 1/2 cups)
3 green onions, cut into 1-inch pieces (about 1/3 cup)
2 packets Swanson ® Flavor Boostâ„¢ Concentrated Chicken Broth
2 tablespoons water

Preparation

1. Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned, stirring often. Remove the chicken from the skillet.
2. Heat the remaining oil in the skillet over medium heat. Add the mushrooms and cook until tender, stirring occasionally.
3. Add the garlic, tomatoes, and onions to the skillet; cook and stir for 1 minute. Return the chicken to the skillet. Stir in the Flavor Boost and water; cook until the chicken is cooked through.

1 bunch of your favorite salad greens
1 red onion — sliced
2 bell peppers — sliced
½ lb. of bacon — sliced (reserve a few tablespoons of the bacon fat for drizzling)
Grated cheddar or your favorite cheese
Dashes of salt
Dashes of pepper
Olive oil — for drizzling

Preparation

1. Heat a griddle and place the sliced peppers and onions on the heated griddle. Sprinkle with salt and pepper and drizzle with olive oil.
2. Place the bacon in a heated pan and cook until crispy.
3. Slice the chicken.
4. Place the salad greens on a plate and top with the grilled peppers and onions. Top with the sliced chicken and bacon. Drizzle a little of the bacon fat over the salad, and top with the crispy bacon and grated cheese.

Ingredients

1 cup uncooked brown rice, cooked according to the package
1 head of broccoli, cooked and drained
1/2 teaspoon salt (for the cooked broccoli)
1 pound chicken, boneless skinless chicken breasts (2 – 3 pieces)
2 tablespoons olive oil
1 – 10.75 ounce can condensed cream of chicken soup
1 cup milk (approximately 3/4 of the soup can)
1/2 teaspoon pepper
1 cup French fried onions
Preparation
1. Preheat oven to 350 degrees F and grease a 7″ x 11″ baking dish.
2. Cook the brown rice as directed on package. We used minute brown rice.
3. Cook and drain the broccoli, then sprinkle the salt evenly over.
4. Cut the chicken into pieces. In a sauce pan over medium heat, brown and cook the chicken in the olive oil. Remove chicken from pan and set aside.
5. In the same sauce pan, combine the cream of chicken soup, milk and pepper. Cook and stir over medium heat until smooth and bubbly.
6. Layering: Spread the brown rice evenly in the bottom of the prepared baking dish. Layer the broccoli, then the chicken pieces. Pour the cream of chicken soup mixture evenly over everything.
7. Bake in a preheated 350 degrees F oven for 25 minutes.
8. Sprinkle the French fried onions evenly on top and bake an additional 10-15 minutes (40 – 45 minutes total), or until the French fried onions are golden brown and crispy.

1 Packet Ching’s Secret Chicken 65 Masala
400g boneless chicken pieces
3 tbsp ginger-garlic paste
1 egg
8-10 curry leaves
Oil for deep frying

Preparation

1. Marinate 400g boneless chicken pieces with 3 tbsp ginger garlic paste, 1 egg, 8-10 curry leaves, 1 pouch Ching’s Chicken 65 Masala for 10 minutes (no need to add salt).
2. Deep fry chicken in hot oil till golden brown and crisp.
3. Serve hot.

Cherry Scones very good snack

Ingredients

For scones you will need:
2 cups AP flour
½ cup sugar
2 teaspoons baking powder
¼ teaspoon fine sea salt
6 tablespoons unsalted butter, chopped
¾ cups whipping cream
¼ cup milk
1/3 cup cherry preserves
For glaze you will need:
Juice of ½ lemon
1 cup powdered sugar
1 tablespoon water

Preparation

1. Preheat oven to 350 degrees F. Line two baking sheets with parchment paper.
2. In food processor combine flour, sugar, baking powder, salt and butter. Transfer to a medium bowl, and gradually stir in cream and milk until a soft dough forms. Roll out dough on a well floured surface, about ½-inch thick. Using a round cookie cutter, cut out the dough and place on prepared baking sheets. Next, using your index finger or a small, round spoon, gently make an indentation in the center of each pastry. Fill with about ½ teaspoon of cherry preserves, and bake for about 18-20 minutes, or until the edges are golden. Transfer onto a cooling rack.
3. For the glaze, combine lemon juice, powdered sugar and water in a small bowl. Using a teaspoon, drizzle glaze over each scone and let the glazed set, about 30 minutes.

Castella Cake Very moist and soft with the combination scent of honey and mirin

A popular Japanese cake. Very moist and soft with the combination scent of honey and mirin. It is also a great gift for anyone

Ingredients

250g Eggs (4 large eggs) at room temperature
80g Caster sugar
50g Honey
75g Milk
10g Cake emulsifier (SP)
55g Bread flor
90g Plain flour
a pinch of salt
50g Melted Butter
10g Mirin

Preparation

1. Preheat oven to 160C.
2. Sieve bread flour, plain flour and salt together twice.
3. Whisk eggs and sugar at medium speed for about 8-10 minutes until batter is thick and creamy white.
4. While whisking the batter, at the same time add warm milk (microwave 30 seconds), honey and SP in a small bowl and stir mixtures till smooth with a hand whisk. (after mixing for a couple of minutes, I found the SP is not easily dissolved in the liquid, so I put the mixtures through a sieve to make sure the SP is thoroughly smooth)
5. Scrap bowl and switch machine to low speed, slowly add in the milk mixture, mix well.
6. Then add in flour bit by bit (about one tablespoon at a time) until well combined.
7. Lastly add in melted butter and mirin in two batches and mix well.
8. Pour batter into prepared wood mould and bake for 50-60 mins on middle rack of the oven or skewer inserted comes out clean. (I baked for 50 mins)
9. Take the baked cake out from oven. Let it rest for a while and cover with a parchment paper on top then invert mould and remove the wood mould.
10. Let the cake cool down slightly and wrap it up with cling wrap and parchment paper. Store the warmed cake in the refrigerator overnight. This is to ensure the castella cake has a moist texture. If you let it cool to room temperature before wrapping, it will end up a bit dry.
11. Trim the sides of the cake before serve.
