Delicious Sausage Soup

This soup some crusty bread and a side salad make a wonderful meal for a cold winter night. Enjoy with so much love, Catherine

Ingredients

2 pounds  of  Kielbasa Sausage
29 oz. can of Chick  Peas  — drained
1 box  of your favorite  macaroni
1 pint of  cherry tomatoes  — halved
1/2 cup  of fresh  parsley  —  chopped
1  onion  — sliced
1 cup of  baby carrots  — sliced
5 cloves  of  garlic  —  chopped
5 stalks  of  celery  —  chopped
2 Jalapeño’s —  chopped  with seeds
1/2 cup  of crushed  tomatoes
4 cups  of  chicken broth
Olive oil
Grated  Romano  cheese

Preparation

1. Heat  griddle and  grill  the Kielbasa Sausage then  cut  into pieces and set aside.
2. In a large sauce pot  heat  olive oil and add the onion, garlic and celery. Sauté until the onion is clear. Add the halved tomatoes, Jalapeño and carrots and continue to sauté for two or three minutes. Add the crushed tomatoes, parsley and sausage and toss. Add the chicken broth and the chick peas  and simmer on low for about 10-12 minutes.
3. While the  soup  is  simmering  prepare the macaroni as directed.
4. In a  soup  bowl place some macaroni and  top  with the  soup.  Add a drizzle of olive oil and  grating cheese.

Delicious Sausage & Peppers

Ingredients

4  sweet  sausages
4  hot  sausages
3 bell  peppers  — sliced
1 Jalapeño — sliced
1 large  sweet onion  — sliced
7 cloves of  garlic  — crushed& chopped
3 tablespoons of salsa
1 handful of fresh Italian  parsley  — chopped
Dashes of  sea salt
Dashes of fresh ground  black pepper
Olive oil  — for drizzling

Preparation

1. Bake  the sausages in the oven and set aside.
2. Heat  a large  frying  pan with a drizzle of olive oil and add the peppers. Add the onions, garlic and parsley and let this sauté for a few minutes while  slicing  the sausages lengthwise. Add the sausages to the peppers along with the tablespoons of  salsa  and toss.
3. Add the dashes of  salt  and pepper to  taste.

Coriander seeds
Dried red chilies
Curry leaves
Scraped coconut

Preparation

1. Here, Roopa shows you a prawns preparation from a coastal region, Karwar.
2. Method:
3.  In a heated pan, add in oil, coriander seeds, dried red chilies, curry leaves and scraped coconut.
4. Roat all these ingredients until the coconut is light brown in colour.
5. Add this to a blender along with some water and blend it into a fine paste.
6. In a bowl, add in the prawns, lemon juice, salt, turmeric powder, chili powder and the paste.
7. Mix well and let it sit for a while.
8. Coat the prawns with rava and rice flour and deep fry them.
9. Garnish and serve.

Delicious Oven Roasted Stuffed Chicken!!!

Ingredients

4 lb. whole chicken
For the Stuffing:
Healthy handful of Italian parsley
4 cloves garlic
15 saltine crackers
1 tablespoon orange marmalade
Zest of 1 lemon
Juice of 1 lemon
Drizzle of olive oil
Rub for Chicken:
½ tsp hot curry
Juice of ½ lemon
½ tsp brown sugar
Dash of salt
Dash of black pepper
1 tablespoon of olive oil

Preparation

1. Preheat Oven 350 degrees:
2. Clean chicken and pat dry.
3. In a food processor combine all of the ingredients for the stuffing and give a few good chops.
4. In a small bowl combine all of the ingredients for the rub and stir with a spoon.
5. Gently separate the skin from the meat and with stuff the stuffing under the chicken skin.
6. Rub the rub all over the outside of the chicken.
7. Place on a rack in a baking dish. Fill the bottom of the baking dish with a cup of water.
8. Bake for about 20 minutes per pound or until juices run clear from the thigh.

Delicious Hotplate Tofu with Prawns

Hotplate Tofu is one of the very popular Chinese cuisines in Asia and a hot favourite too. If you don’t have a hotplate to make this yummy dish, just use any metal pan like this one that I have bought from Daiso for just $2! The result is just as delicious minus all that the sizzling.

Ingredients

250g Prawns
2 Egg Tofu
50g Minced Pork
2 Eggs ( beaten )
1 sprig Spring Onion (chopped)
½ tsp Minced Garlic
½ Red Chilli ( chopped )
1 tbsp Olive Oil
Pork Marinade:
½ tsp Sesame Oil
½ tsp Oyster Sauce
Pinch of Minced Ginger
Pinch of Corn Flour
Dash of Pepper
Prawns Marinade:
Pinch of Salt and Pepper
Pinch of Corn Flour
XO Sauce Mixture:
1 tbsp Lee Kum Kee XO Sauce with Dried Scallops
1 tsp Chinese Cooking Wine ( 花雕酒 )
½ tsp Oyster Sauce
30ml Chicken Broth

Preparation

1. Remove prawn heads and cut away whiskers. Set aside for other uses such as making stock. Remove shells and devein prawns. Butterfly and rinse thoroughly, then marinate for about 15 minutes.
2. Rinse pork and marinate for 30 minutes.
3. Slice tofu in equal thickness accordingly to your liking and deep fry till golden brown. Drain and set aside.
4. Heat oil in pan and sautéed garlic till fragrant. Add prawns and fry till they turn pink. Remove and add pork. Stir fry till fragrant. Remove and set aside.
5. Lay your tofu neatly on pan, lower heat then pour the beaten eggs evenly. Throw in prawns and pork, and then drizzle the Lee Kum Kee XO Sauce over. Cover and let it cook for about 2 minutes.
6. Sprinkle spring onions and chillies, top with more minced pork (optional), and serve your delicious home-made Hotplate Tofu with Prawns ( 铁板豆腐虾 )!

Delectable Roasted Pork Tenderloin With Mushrooms and Tomato Salad

This entire meal was under 300 calories, colorful and healthy. Tender pork tenderloin, mushrooms and tomatoes with a sprinkle of parmesan cheese made for a filling dinner.

Ingredients

8 ounces  pork tenderloin
2 cups  cherry tomatoes,  quartered
1 cup  mushroom  , sliced
1 small  yellow bell pepper,  cut into bite sized pieces

2 large  green onion,  sliced
2 tablespoons  parsley,  minced

Preparation

1. Preheat oven  to 350.
2. Season  pork with  grill  seasoning.
3. Roast  in oven for 40 minutes, or until a thermometer reaches a temperature of 160 degrees Fahrenheit.
4. Remove from oven and let rest for 10 minutes before  slicing.
5. In the meantime combine remaining ingredients to make your salad. Put in frig to  chill  while pork  roasts.

Deep Fried Turkey Recipe

Playing around a couple weeks ago, we injected a turkey and then smoked it at 150 degrees for five hours, then reinjected and dropped it in the hot grease. It was very good for a combo smoked-fried turkey.

Ingredients

1 turkey (11 to 15 lbs)
2 tablespoons Garlic juice
1 tablespoon Salt
4 tablespoons Louisiana Hot Sauce
1 tablespoon Cayenne pepper
3 tablespoons Worcestershire
1 can Chicken broth

Preparation

1. Mix all ingredients and let dissolve to blend.
2. Inject your turkey at least 24 hours before cooking. Use about 2/3 of this batch for the first injection.
3. 30 minutes before dropping the bird in the hot grease inject the remaining 1/3 of this batch.
4. We fry turkeys at 350 degrees in Peanut oil. A 11 to 15 pound turkey will take at least 45 minutes. You will need to use your own techniques for deciding when the turkey is done.

Date Night Chicken is the dish to make him ask, “What are you doing for the rest of your life?” Only 4 ingredients to this quick, easy, bring them to their knees begging for more recipe.

Ingredients

½ cup maple syrup
¼ cup Dijon mustard
2 tablespoons rice wine vinegar
4 skin-on, bone-in chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
Fresh chopped parsley, fresh chopped rosemary and chopped peanuts, optional

Preparation

1. Preheat oven to 450 °F.
2. In a medium size bowl, mix together the maple syrup, Dijon mustard and rice wine vinegar thoroughly. Set aside.
3. Rinse chicken thighs and thoroughly pat dry. Season chicken with salt and pepper.
4. Heat oil in a 9” cast-iron skillet over medium high heat until hot but not smoking. Place chicken in skillet, skin side down, and cook 5-7 minutes, until the skin is seared and golden brown. Flip chicken over in the skillet so the skin side is now on top. Pour the sauce mixture over the chicken in the skillet and carefully transfer it to the oven.
5. Bake the chicken for 15-20 minutes more or until a meat thermometer reads 165 °F.
6. Transfer to a plate and garnish with chopped fresh parsley, rosemary and chopped peanuts, if desired. Spoon some sauce over the chicken and serve.

Date Biscotti-بسكوت بالتمر

Biscotti recipe with a twist!

Ingredients

3  eggs  beaten
1 cup  sugar
1/4 cup  butter  (melted and cooled)
3 cups pitted  dates  (cut into small pieces)
1 cup  walnuts  (chopped)
1 cup  flour
1 teaspoon  baking powder
3/4 teaspoon  salt
1 teaspoon  lemon  zest
2 tablespoons A little bit of  milk,  about, in case the mix is tough to stir
Confectioners sugar  for garnish

Preparation

1. Melt  the butter and  cool.
2. Beat  eggs, add sugar,  cooled  butter and  mix  well.
3. Add the  chopped  dates and nuts.
4. Sift all the  dry  ingredients and  mix  together, add to egg mixture and  mix  well.
5. Pour batter into a greased 13 X 9 pan.
6. Bake  in an 350 oven for 40 -45 minutes. When toothpick comes out clean they are done.
7. Cool  and  cut  into biscotti shape pieces.
8. Bake  again in a very hot oven for about 10 minutes until the pieces become crispy.
9. Sprinkle with confectioners sugar.

Cyclops Meatballs With Scary Green Hair

These healthy meatballs are a perfect dinner for kids, especially on Halloween! Pop half an olive in the center to make a cyclops, and squiggle some ketchup for a mouth. Spinach spaghetti tossed with Parmesan cheese makes for creepy crazy hair!

Ingredients

For the cyclops:
1 pound ground turkey (give or take a few ounces depending on package weight)
1 cup sharp cheddar cheese, grated
1/2 apple, cored and seeded, then grated (peel on)
1/4 onion, finely chopped
1/2 cup bread crumbs
Salt and pepper
6 Pimento-stuffed green olives
Ketchup
For monster hair:
Spinach spaghetti
1-2 T Butter
3/4 cup Parmesan cheese, grated

Preparation

1. Preheat oven to 375 degrees F.
2. Mix the ground turkey with the grated cheese, grated apple, diced onion, breadcrumbs, salt and pepper in a large bowl.
3. Form into 4-6 evenly-sized balls. Gently press each ball to flatten the bottoms (this will help keep them from falling over).
4. Place on a non-stick cookie sheet and bake for 15 minutes or until a thermometer inserted in the center reads 165 degrees F.
5. 5 minutes before meatballs are done, prepare the spaghetti.
6. Bring salted water to a boil in a large stockpot. Add spaghetti and cook until done.
7. Drain and put in a medium bowl.
8. Toss spaghetti with butter and Parmesan cheese.
9. Remove meatballs from oven and place on serving dish.
10. Pipe a mouth on each meatball with ketchup. (TIP: to make a piping bag squirt some ketchup into a plastic sandwich bag and snip the tip off one corner)
11. Place spaghetti on top of each meatball for the monsters’ hair.
12. Serve with extra ketchup for dipping.
