  • 1 teaspoon  cornstarch
  • 1 tablespoon water

  1. To make the sauce, combine the bourbon, soy sauce, brown sugar and garlic. Whisk to combine. Combine the cornstarch and water and stir until smooth. Whisk into the sauce. Set aside.
  2. Heat the oil in a  skillet over medium-high heat. Season the chicken with salt and pepper. Cook the chicken in the hot oil until browned and cooked through, about 5 minutes.
  3. Pour the sauce into the skillet and cook for about 4 to 5 minutes. Garnish with chopped green onions.

  • 1 medium zucchini, peeled and chopped
  • 4 – 6 mini precooked chicken sausages (or to taste)
  • 2 tablespoons  soy sauce (or to taste)
  • 1 teaspoon chopped garlic
  • 1/2 teaspoon  onion powder

Here’s how to make it:

    1. In a large sauté pan, add the olive oil, garlic, lemon juice, soy sauce and onion powder. Stir to combine over medium heat.
    2. Add the carrots and zucchini. Sauté for 5 minutes
    3. Add the rice, edamame and chicken sausages. Sauté for 5 additional minutes until combined and heated through. Season with salt and pepper, if desired.

  • 1 cup  flour
  • 1 can (12 ounces)  evaporated milk
  • 1 can (10 ounces)  cream of chicken soup
  • 3/4 cup water

Here’s how to make it:

  • Pour the melted butter into a 13×9-inch baking pan. Put the flour into a shallow bowl. Put about 1/3 cup of the evaporated milk into another bowl.
  • Season the chicken with salt and pepper. Dip the chicken into the milk and then into the flour. Place it on top of the melted butter. Bake in a preheated 350-degree F oven for about 30 minutes.
  • Combine the remaining evaporated milk in the can (I also added what was left from dipping the chicken), the cream of chicken soup and water.
  • Flip the chicken over.
  • Pour the evaporated milk mixture over the chicken. Bake another 25 to  30 minutes or until chicken is cooked through and browning on top. Sprinkle the top with parsley flakes, if desired.

  1. Combine the ground beef, garlic powder, onion powder, mustard, salt and pepper in a bowl. Gently mix until just combined. Shape into four to five, depending on size,  loosely packed patties.
  2. Add a little olive oil to a skillet and heat. Add patties and cook until browned on one side. Flip them over and continue to cook until they’re almost done. Remove from pan and set aside.
  3. Add the onions and mushrooms, if using, to the skillet and cook until soft, about 4 to 5 minutes.
  4. Pour in the French onion soup, gravy mix, water and Worcestershire sauce. Stir to combine.
  5. Put the meat patties back on top. Spoon the sauce over them and continue to cook until meat is cooked through.
  6. Serve with mashed potatoes, rice or egg noodles.

Ingredients

  • 3 cups riced cauliflower
  • 1 large egg
  • 3/4 teaspoon salt (divided)
  • 1 1/2 pounds  boneless, skinless chicken breasts
  • 2 cups  low-sodium chicken stock
  • 1 1/2 cups button mushrooms, cut into quarters
  • 1 1/2 cups asparagus, cut into 1-inch pieces
  • 1/4 cup low-fat cream cheese

Here’s how to make it:  

  1. To make the dumplings, spread the riced cauliflower on a baking sheet lined with parchment paper. Bake in a preheated 400-degree F oven for 20 minutes until golden brown, stirring occasionally. When done, remove from oven and allow to cool. Keep oven on at 400 degrees F and set baking sheet lined with parchment paper aside for later use.
  2. In a kitchen towel, squeeze the cauliflower to remove any excess moisture. Mix together the squeezed cauliflower with the egg and salt. Shape the cauliflower mix into eight little dumplings and place back on baking sheet. Bake for 5 minutes.
  3. To prepare the chicken stew, combine the chicken, chicken stock and a 1/2 teaspoon of salt in a pot with a tight-closing lid. Bring to a boil and simmer gently for about 20 minutes until chicken is tender. Remove the chicken from the stock and set aside.
  4. Add the mushrooms, asparagus and cream cheese to the stock, bring to a boil and simmer gently for 8 minutes, stirring occasionally.
  5. Pull the chicken into bite-sized pieces and return to the sauce and heat through.
  6. To serve, place two dumplings into each bowl and top with an equal amount of stew, about 1 1/2 to 2 cups per bowl.
