Slow Cooker Orange Chicken Recipe [Paleo, AIP]

Make delicious orange chicken in your crockpot!

Ingredients

4 chicken breasts, sliced
3 navel oranges, peeled
1 Tablespoon of fresh ginger
2 Tablespoons of fresh garlic
1/4 cup tamari sauce or (coconut aminos for AIP)

Preparation

1 Place the oranges, ginger, garlic, and tamari sauce (or coconut aminos) into a blender and blend well.
2 Save 1/2 cup of the sauce to serve with.
3 Place the rest of the sauce with the sliced chicken breasts into the slow cooker.
4 Cook for 5-6 hours until tender.
5 Serve with the rest of the sauce

A cinnamon-sugar churro bundt cake guaranteed to make your tomorrow morning better.

Ingredients

For the Cake:
1/2 cup sour cream
1 large egg
1 1/2 teaspoons vanilla extract
2 tablespoons vegetable oil
2 tablespoons unsalted butter, melted
1/2 cup sugar
1 cup all purpose flour
1/2 teaspoon baking soda
dash of salt
For the Topping:
1/3 cup sugar
2 tablespoons brown sugar
1/4 teaspoon cinnamon
3 tablespoons unsalted butter, melted

Preparation

1 For the Cake: Preheat oven to 350 degrees F. Lightly oil a 6-cup bundt pan and set aside.
2 In a medium mixing bowl add the sour cream, egg, vanilla, oil, butter and sugar, mix well to blend.
3 Add the flour, baking soda, salt and mix well to incorporate.
4 Pour the batter into the prepared baking pan and bake for about 20-25 minutes or until firm tot he touch. Remove from oven and let cool in pan for a few minutes before removing it.
5 While the bundt cake is cooling making the topping.
6 For the Topping: In a small bowl add the cinnamon, sugar and brown sugar, mix well.
7 When the cake is cool, remove it from the pan and place on a serving platter. Using a pasty brush, generously brush the cake all over with the melted butter. Immediately sprinkle with the cinnamon-sugar mixture. Slice and serve.

Penne pasta, peas and bacon. Talking about comfort food, pasta is way up there in the list of food that not only is easy to prepare, but everyone enjoys and craves it.

This quick, it takes as long as it takes to cook the pasta to have it all ready, it is a savory combination of the sweet peas with crisp onions and bacon. The heavy cream binds it all together blending the flavors well.

Ingredients

1 tablespoon olive oil
1/2 diced very small yellow onion
1 cup frozen peas
6 thick slices cut into small slices bacon
3/4 pound penne pasta
1/4 cup heavy cream

Preparation

1 Bring a large pot of salted water to a boil and add the pasta. Halfway thru cooking the pasta, refer to package cooking instructions, add the frozen peas to the water
2 Meanwhile, in a large skillet, add the olive oil over medium-high, and add the finely diced onions and the bacon. Cook until the bacon and onions are crisp but not burned.
3 Drain the pasta and peas and add them to the onion bacon mixture. Lower the heat to medium and add the heavy cream.
4 Stir well, add more cream if needed and serve immediately.

Ingredients

8 skin on chicken drumsticks
2 teaspoons fresh thyme, finely chopped
1 teaspoon fresh rosemary, finely chopped
kosher salt and black pepper
1 tablespoon Extra Virgin olive oil
3 tablespoons unsalted butter, divided
2 large yellow onions, peeled and thinly sliced
2 garlic cloves, peeled and smashed
1 tablespoon chopped fresh sage, plus a few additional whole leaves for garnish
16 ounces (about 1-pound) baby creamer potatoes
1 cup dry white wine
1 tablespoon Worcestershire sauce

Preparation

1 Preheat the oven to 400 degrees F.
2 Season the chicken with the thyme, rosemary, salt, and pepper.
3 In a large skillet add the olive oil and 2 tablespoons butter and place over medium heat. Add the onions and season with salt and pepper. Cook, stirring occasionally, until soft, golden in color and caramelized, about 10 minutes.
4 Add the sage and potatoes and mix well to coat. Reduce the heat to medium. Now mix in the wine and Worcestershire sauce.
5 Arrange the drumsticks over the potatoes. Season with salt and pepper. Transfer to the oven and roast for until you begin to see coloration, the chicken is cooked through, and the potatoes are tender, about 40-45 minutes.
6 Serve the chicken with some onions, a little sauce spooned over the top and a few potatoes on the side. Garnish with a few sage leaves.

Here I am, again with the dilemma of what to do with ripe bananas. I do not want to freeze them.   However, I do I have the best recipe for you.   Banana Cake.   Actually this recipe I always make it into bread loaves and today I was in the mood for something new. Used my bundt mold.

It cooked to perfection within the same amount of time as a loaf would, and as moist as ever.   Not too sweet, fluffy light and so tasty. Perfect for afternoon tea, with whipped cream.   With your favorite ice cream over it.   The possibilities are endless with this dessert. A fail-proof recipe that I have been making for the past 30 plus years.

Ingredients

2 cups granulated sugar
1 cup unsalted butter, softened
6 ripe bananas, mashed with a fork
4 eggs well beated
2 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt

Preparation

1 Preheat oven to 350 °.
2 In a KitchenAid mixer, beat together sugar and butter until light and fluffy. Add bananas and eggs, beating until well-mixed.
3 Sift together dry ingredients. Blend with the bananas mixture but do not over mix.
4 Grease a bundt pan and drop the banana mixture evening out the top. Bake for 45 minutes to one hour, until firm in the center and the edges begin to separate from pans. Do not over bake.
5 Cool on a rack for 10 minutes before removing from pans.

A smokey mezcal blackberry smash for Halloween that’s wickedly good.

Ingredients

10 fresh blackberries, plus more for garnish
1 sprig of rosemary, spine removed
1 ounce freshly squeezed lemon juice
1/2 ounce freshly squeezed blood orange juice
2 teaspoons agave
2 ounces Mezcal
2-3 dashes of orange bitters
Tonic water

Preparation

1 Place a handful of ice into a lowball glass and set aside.
2 Using a cocktail shaker, add the blackberries, rosemary, lemon juice, orange juice, and agave. Using a muddler, muddle the mixture well until the blackberries are nice and ground up.
3 Add the Mezcal, bitters and a few ice cubes. Shake vigorously for about 15 seconds.
4 Double strain into the prepared cocktail glass, top with some tonic water and garnish with additional blackberries if desired.

Ingredients

2 lbs of Thin Round or Top Sirloin Steaks (no skirt or flank)
2 Yellow Onions (sliced in thin rings)
4 cloves minced Garlic
½ cup Vinegar
4 tbsp Olive Oil
1 ½ tsp Goya Adobo
2 packets Goya Sazon
¾ tsp Cumin
½ tsp Oregano
½ tsp Salt
¾ tsp Pepper
¼ cup Cilantro

Preparation

1 Create marinade containing — Garlic, 2 tbsp of Olive Oil, ¼ cup of Vinegar, 1 packet of Sazon, ½ tsp of Adobo, ½ tsp of Oregano, ¼ tsp of Cumin, and ¼ tsp of Pepper
2 Tenderize meat and mix in a large bowl with thinly sliced onions and marinade
3 Heat oil in pan to medium high and remove steaks from bowl to sear for about 5 minutes
4 Add onions and remaining marinade to pan and continue cooking for about 5-10 more minutes until onions become translucent
5 Add ¼ cup vinegar, ¾ cup water, 1 packet of Sazon, 1 tsp of Adobo, ½ tsp Cumin, ½ tsp Salt, and ½ tsp Pepper
6 Cover and lower heat to medium for 10-15 min
7 Add cilantro and serve with steamed rice
8 Enjoy!

Today I will introduce you to the instructions for preparing and making the Spanish summer soup-Gazpacho.Refreshing,tasty and really easy to make.Everyone like it,especially the small kids.This recipe contains only summer ingredients like cucumbers,tomatoes,garlic,onion,peppers and many other healthy and tasty ingredients.

Ingredients

1 kilogram fresh and juicy tomatoes
1 garlic clove
1/2 head medium white onion
1 medium green pepper
1 medium cucumber (about 15 cm)
1/4 teaspoon cumin powder
3 tablespoons red wine vinegar
1/2 teaspoon sea or table salt
1 cup extra virgin olive oil
1 whole wheat bread slice (any type of bread slice will work too)

Preparation

1 Wash carefully the tomatoes.Chop them into pieces.
2 Peel the garlic clove.
3 Peel the white onion and dice into pieces.
4 Wash the green pepper,clean out the from the seeds and cut into pieces.
5 Peel the cucumber.
6 Soak the bread slice in some water for a while.After that,squeeze the bread slice and set aside.
7 In a high speed blender or food processor,put the chopped tomatoes,garlic clove,diced onion,chopped pepper,peeled cucumber and soaked bread slice.
8 Add the seasonings and extra virgin olive oil.
9 Blend until you have nice,smooth and creamy texture.
10 Pour the ready soup into large bowl and refrigerate for a while.
11 The colder it is,the better.
12 Serve with a drizzle of more extra virgin olive oil on the top and enjoy the Spanish taste.

Pan-Fried Teriyaki Cod Fish

Being a fan of Cod Fish, I try to cook the gourmet fish in different styles. Smooth and flaky white flesh is what makes Cod Fish so irresistible even for someone like me who does not enjoy eating fish.

Ingredients

2 Cod Fish Steaks
2 slices Lemon
½ Red Sweet Peppers
½ Orange Sweet Peppers
½ Tomato
¼ Japanese Cucumber
1 tbsp Teriyaki Sauce
2 tsp Mizkan Mitsukan Mirin Rice Wine ( 味醂 )
½ tsp Salt
1 tsp Corn Flour
1 tbsp Cornstarch
5 tbsp Olive Oil
Teriyaki Sauce:
15 ml Mirin Wine
20 ml Teriyaki Sauce
10 ml Water

Preparation

1 Clean and marinate fish with seasonings for about an hour in the fridge, then turn over and do the same.
2 Dice vegetables and 1 lemon slice.
3 Heat pan pour in teriyaki sauce mixture. Add vegetables and cook till soft. Stir in cornstarch and dish out salad on serving plate.
4 Pat dry fish and coat with corn flour. Heat oil and pan fry cod fish till slightly char. Do the same for the other side and the skin.
5 Drain and place fish on plate with vegetables. Drizzle excess salad sauce onto fish and top with a slice of lemon for that additional zest! Your Yummy Japanese Style Pan-Fried Teriyaki Cod Fish ( 日式香煎鳕鱼 ) is ready for the table!
