Italian Spinach Ricotta Dumplings Recipe (Malfatti) in Napoli Sauce Is Perfectly Imperfect

If you’ve never made homemade pasta before or have and it didn’t turn out too well, this authentic malfatti recipe is for you! Malfatti means “badly formed” in Italian, and it describes these Italian ricotta dumplings to a tee. These badly formed spinach ricotta dumplings may look hard to make, but they’re not. The Napoli sauce is even easier to make.

Make the Napoli sauce first and let it simmer while you prepare the malfatti. The Napoli sauce starts by cooking onion and garlic in olive oil until soft. Add a can of crushed tomatoes, tomato paste, water and a pinch of sugar, and let the sauce simmer of the stovetop for about 20 minutes.

The simple malfatti dough is made with baby spinach that’s been wilted with onion and garlic. Ricotta cheese (dry ricotta, not wet ricotta) is stirred in along with basil, an egg, an egg yolk, Parmesan cheese and flour. The mixture is shaped into quenelles (football shaped) and boiled until they float. Put them onto a bed of the Napoli sauce in a casserole dish and bake until they start to lightly brown. Serve with additional grated Parmesan and fresh basil leaves.

Be sure to buy the driest ricotta you can find. If it’s very wet, it will be hard to shape and handle the malfatti. Serve these easy Italian baked ricotta dumplings in Napoli sauce with a salad and hot, crusty bread. My pesto breadsticks would go great with this dinner.

Ingredients

Sauce

  • 2 tablespoons olive oil
  • 3 cloves  garlic, minced
  • 1 small onion, minced
  • 1 can (24 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 1/2 cup water
  • 1 teaspoon granulated sugar

Malfatti

  • 1 bag (10 ounces) baby spinach (about 6 packed cups), chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic,  minced
  • 1/2 a small red onion, minced
  • 1 pound (16 ounces) ricotta, drained well (ricotta needs to be somewhat dry)
  • 1/4 cup basil leaves, julienned
  • 1 egg
  • 1 egg yolk
  • 1 cup freshly grated Parmesan, plus more for serving
  • 1/2 cup flour

Here’s how to make it:  

  1. To make the sauce, heat the olive oil a skillet. Add the garlic and onion and cook, stirring, until soft, about 2 to 3 minutes. Add the crushed tomatoes, tomato paste, water and sugar. Season with salt and pepper. Bring to a simmer, reduce heat and cook on low, stirring often, for about 20 minutes.
  2. To make the malfatti, heat the olive oil in a skillet. Add the spinach, onion and garlic. Season with salt and pepper.  Cook until spinach is wilted. Remove to a bowl and let it cool.
  3. Add the ricotta, basil leaves, egg, egg yolk, Parmesan cheese and flour to the cooled spinach. Mix well. Season with salt and pepper. If the mixture is too wet to form into dumplings, add a little more flour. Form the dumplings into football shapes (about 1 1/2 tablespoon per malfatti).
  4. Bring a large pot of water to a boil. Cook the dumplings a few at a time until they float to the surface, about 2 minutes. Remove to   paper towels. Repeat until all the dumplings are cooked.
  5. To assemble the casserole, pour the sauce into a baking dish. Top with the malfatti. Bake in a preheated 350-degree F oven for about 15 minutes. Serve with additional grated Parmesan cheese and fresh basil leaves.

Easy Nashville Hot Grilled (or Baked) Chicken Recipe Fires Up Dinner

Nashville Hot seems to be all the rage lately. You can’t open a restaurant menu or scroll through recipes online without seeing something from Nashville that’s hot. These easy grilled or baked chicken legs decided to join the party. They are juicy and pack some spice!

The chicken legs are seasoned with salt and black pepper before being grilled or baked until juicy and cooked through. A simple Nashville Hot sauce is made with hot sauce (use your favorite), vegetable oil, sugar, garlic powder, smoked paprika and a shake of cayenne (add as much as you like). The cooked chicken drumsticks are tossed in the sauce or you can baste it on during the last few minutes of cooking (or do both!). Either way, these chicken legs are on fire!

You could use chicken thighs, chicken wings or chicken breast for this chicken dinner. Keep in mind that cooking times will vary depending on the chicken pieces used. Sauce

  • 1/4 cup hot sauce

  • dash of ground cayenne pepper

Here’s how to make it:

  1. Heat the grill to medium heat or the oven to 375 degrees F. Season the chicken with salt and pepper. Grill the chicken, covered, turning often, until cooked through, about 20 minutes. If you bake in the oven, put the chicken on a baking sheet and bake, turning occasionally, until cooked through, about 30 to 40 minutes. (Chicken should have an internal temperature of 165 degrees F.)
  2. While the chicken cooks, whisk together all of the sauce ingredients. Toss the cooked chicken in the sauce or you can brush the sauce on the chicken during the last 10 minutes of cooking.

Creamy Garlic Shrimp Recipe: A Mind-Blowing 15-Minute Shrimp Dinner

It was the photo of this shrimp recipe that first caught my eye. The creamy shrimp made my mouth water. The shrimp were served over crisp, buttery French bread slices. In the middle of a diet and reducing my carbs, I almost scrolled past it until I thought how delicious these creamy shrimp would be served over mashed cauliflower. Wow! So glad I stopped scrolling!

Large shrimp are seasoned with smoked paprika, ground cayenne or crushed red pepper flakes, and garlic before being pan-seared in clarified butter (or regular butter). Heavy cream, lemon zest and lemon juice are stirred in. The sauce thickens while the shrimp finish cooking. The whole process takes less than 5 minutes.

This creamy garlic shrimp recipe is on the table in about 15 minutes. The longest part of this seafood recipe is cleaning the shrimp. I bought shrimp already de-headed and shells split so they were much faster to clean. Use only raw shrimp for this recipe. Save the precooked frozen shrimp for another day.

Serve this garlic shrimp for dinner  over mashed cauliflower, mashed potatoes, rice, grits or even egg noodles. Or, you could serve it over skillet-toasted French bread slices like in the original recipe. Shrimp toast, anyone?

  1. Mix the shrimp with the smoked paprika, crushed red pepper flakes and garlic in a bowl.
  2. Heat the butter in a large skillet. Put the shrimp into the skillet in a single layer. Cook over high heat for 1 minute.
  3. Add the heavy cream, lemon zest and lemon juice.
  4. Cook, stirring, until shrimp are cooked through and sauce has thickened, about 2 to 3 minutes. Season with salt and pepper. Serve immediately.

Who doesn’t love a good chicken chili, especially in the cooler months? This easy chicken chili recipe is made with navy beans, corn, chopped green chiles, lime and spices. Delicious! Another bonus is that it cooks in the slow cooker. No muss, no fuss. The only fuss you do have is soaking the navy beans, which really is easy to do. You could do this the day before so they’re ready to go when you want to cook the soup.

  • 3 cups water
  • 2 bone-in chicken breast halves

  • 1 onion, chopped

  • 1 tablespoon chicken bouillon granules
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 tablespoons lime juice (or more to taste)
  • toppings: shredded cheese, cilantro, avocado,  red onion, fresh jalapeno,  tortilla chips, lime wedges

Here’s how to make it:

  1. Put the navy beans into a soup pot. Add enough water to cover. Bring to a boil and cook for 2 minutes. Turn the heat off, cover and let them soak for 2 to 4 hours. Drain beans.
  2. To a slow cooker, add the soaked beans,  water, chicken, corn, onion, chopped green chiles, garlic, chicken bouillon granules, ground cumin and chili powder. Cover and cook on low for 5 to 6 hours or until beans are tender.
  3. Remove the chicken to a plate. Let the chicken cool enough easy to handle, then remove the chicken and shred. Put the chicken back into the slow cooker. Add the lime juice. Season with salt and pepper. Serve with desired toppings.

Baked ham takes centerstage when Easter rolls around. There are so many different ways to cook a holiday ham. This honey-glazed spiral ham has just six simple ingredients and is ready in under two hours.

  3. Sprinkle the chicken some paprika. Top with the mozzarella cheese.
  4. Bake in a preheated 350-degree F oven for about 25-35 minutes, or until chicken is cooked through. If desired, broil for a couple minutes to brown up the top.
