Baked Chicken With Warm Avocado and Feta Salsa

Ingredients

Chicken  — quartered
Marinade:
Juice of 1/2 lemon
3 cloves  garlic  — crushed & chopped
3 tablespoons  Olive oil
Dashes of dried Oregano
Warm Salsa:
3  avocados  – diced
1 quart of  grape tomatoes  — halved
1 cup  of crushed  feta cheese
1 small red  onion  — sliced
1 small yellow  onion  — sliced
3 cloves of  garlic  — chopped
1 teaspoon  capers
1/2 cup of  cilantro  — chopped
4 slices of  bacon  — cut
Olive oil  — to drizzle

Preparation

1. Preheat oven  350 degrees:
2. Combine the ingredients for the marinade and  top  over the chicken.  Bake  the chicken for 45-50 minutes.
3. Warm  Salsa:
4. On a  heated  griddle place the bacon and all the veggies, EXCEPT the avocados and cilantro.  Grill  the veggies until the bacon is done and the onions are golden. Place in a bowl and add the avocado, cilantro and the feta.
5. Serve  with the chicken.

Ingredients

4 pounds of  chicken  pieces
1  Juice of  lemon
1 cup  of  chopped  parsley
4 cloves  of  garlic  —  chopped
1 cup  of seasoned  breadcrumbs
Drizzles of  olive oil

Preparation

1. Preheat Oven  350 degrees:
2. In a bowl  mix  the breadcrumbs, parsley, garlic, lemon  juice  and drizzles of olive oil and toss.
3. Place the chicken pieces in a  baking  dish  and drizzle a little olive oil over the chicken.  Top  the chicken pieces with the breadcrumb mixture and drizzle a little more olive oil.
4. Place the chicken in the oven and  bake  for about 45 — 50 minutes or until the chicken is a beautiful golden  color.

Baked Chicken Wings by StreetSmart Kitchen

Mouthwatering baked chicken wings with savory crispy skin that locks in a smoky cumin flavor and much more. It only takes 10 minutes of hands-on time.

Ingredients

3 pounds chicken wings (whole wings, wingettes, drumettes, or a mix of them)
1 1/2 teaspoons sea salt
2 teaspoons smoked paprika
1 teaspoon ground cumin
1 teaspoon cumin seeds (or ground cumin)
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon cayenne pepper
3 tablespoons butter, melted

Preparation

1. Preheat oven to 450 °F.
2. Rinse chicken wings and pat dry with paper towels. Line a large baking sheet or two 9X13” baking pans with foil.
3. Combine all spices in a small bowl and rub onto wings.
4. Arrange prepared wings in the baking pans in a single layer. Gently brush melted butter on the seasoned wings.
5. Bake for 25-30 minutes or until the temperature of the wings reaches 165 °F.

Baked Buffalo Chicken Wings

Notes: It took my wings about an hour to cook properly in my oven. Keep checking them to see if they are done. Also, the skin never got truly crispy, the way they do when you fry them, but they were still done and tasted great. I omitted the cayenne pepper because I don’t like anything too spicy.

Ingredients

Ingredients:
3/4 cup  all-purpose flour
1/2 teaspoon  cayenne pepper
1/2 teaspoon  garlic powder
1/2 teaspoon  salt
20  chicken wings
1/2 melt  (one stick)  butter
1/2 cup hot  pepper  sauce (I like Frank’s RedHot)

Preparation

1. Line a  baking  sheet with aluminum foil, and lightly grease with cooking spray. (I chose to buy disposable tins to cook mine in, and it was great because they were very messy at the end and I could just throw them out!
2. Place flour, cayenne pepper, garlic powder and  salt  into a resealable plastic bag, and shake to  mix.  Add the chicken wings,  seal  and toss until well  coated  with the flour mixture.
3. Place the wings onto your prepared  baking  sheet (or disposable  baking  sheets) and place into the  refrigerator  for a least an hour. (I did this the day before and let sit over night. This making day-of cooking that much easier!)
4. Preheat oven  to 400 degrees F (200 degrees C).
5. Whisk  together  melted butter  and hot sauce in a small bowl. Dip the wings into the butter mixture, and place back onto the  baking  sheet.
6. Bake  in the  preheated oven  until the chicken is no longer pink in the center, and crispy on the outside, about 45 minutes.  Turn  the wings over halfway during cooking so they cook evenly.
7. Notes: It took my wings about an hour to cook properly in my oven. Keep checking them to see if they are done. Baked Boneless Pork Chops with Sauce

Ingredients

5 – Boneless pork chops (about 1 inch thickness)
Dashes of salt
Dashes of black pepper
Drizzle of olive oil
For the Sauce:
28 oz. can crushed tomatoes
5 cloves garlic
1 large onion — sliced
2 cups frozen peas
Dashes of salt
Dashes of black pepper
Dashes of ground oregano
Dashes of garlic powder
Pinch of sugar
Dashes of chili powder
Healthy handful of fresh basil — chopped
2 stalks celery — chopped
1 ½ cups fresh bread crumbs
Grated Romano or Parmesan cheese
Olive oil for drizzling

Preparation

1. Preheat Oven 350 degrees:
2. Drizzle a little olive oil in a baking pan. Place the pork chops in the pan and season with salt and pepper and another drizzle of olive oil.
3. Top with the sliced onions, chopped garlic, fresh basil, celery and the crushed tomatoes. Add the seasonings and peas and top with the fresh bread crumbs.
4. Drizzle a little olive oil over this and top and finish with the grated cheese.
5. Place in the oven for 50-55 minutes, depending on the thickness of the pork chops you are using.

Baked Boneless Chicken Thighs with Noodles

Ingredients

Boneless chicken thighs — setting the bones aside
Flour
Vegetable oil
Preheat the Oven 350 degrees:
Place the flour in a shallow dish and dip each chicken thigh in the flour. Place in a baking pan and drizzle the vegetable oil over the thighs.
Bake 40-45 minutes, depending on the size of the chicken thighs.
For the Noodles:
2 carrots — sliced
1 onion — sliced
2 cloves garlic — chopped
Handful of Italian parsley — chopped
4 cups chicken broth
Juice of ½ lemon
Salt to taste
Black pepper to taste
½ tsp dried oregano
Olive oil
Bones from the chicken thighs
1 tablespoon of butter
1 lb. of your favorite noodles
Romano cheese for grating

Preparation

1. Drizzle olive oil in and add the chicken thigh bones. Add the sliced onion, carrots, parsley and garlic. Sauté until the onion is clear.
2. Add the chicken broth and the seasonings. Simmer on low for about 40-45 minutes while the chicken thighs are baking. Remove the bones.
3. Prepare the noodles as directed.
4. Place the noodles in a serving bowl and using a net, strain the soup over the noodles. Squeeze half a lemon over the noodles, one tablespoon of butter and grated Romano cheese. Serve with the baked chicken thighs.

BahnMi Meatball Sub

Juicy Pork Meatballs made with Spices, Basil, Garlic and Onion Placed in a Fresh Baguette with a sriracha lime sauce and sliced veggies.

Ingredients

FOR THE MEATBALL:
2 Ground Pork
2 Teaspoons Ground Pepper
1 Teaspoons Ground Cinnamon
1 Tablespoon Sriracha Sauce
2 Teaspoons Ground Ginger
4 Cloves Garlic, Minced
½ White Onion, Finely Chopped
1 Lime, Juiced
½ Cup Basil, Roughly Chopped
2 Tablespoons Hoisin Sauce
½ Tablespoon Soy Sauce
FOR THE TOPPINGS:
2 Large Carrots, Trimmed and Peeled
3 Jalapenos
1 Cup Cilantro, leaves removed
1 ½ fresh baguettes
FOR THE SAUCE:
¼ Cup Plain Nonfat Greek Yogurt
½ Lime, Juiced
2 TSP Srirahca Sauce

Preparation

1. Preheat the oven to 400 degrees Fahrenheit. Make the meatballs. Mix the meat with the spices,garlic, onion, lime basil, hoisin and soy sauce until evenly distributed. Roll the meatballs into 1 inch diameter meatballs. Place in multiple glass baking dishes, making sure the meatballs do not touch. Cook until done all the way through, about 20 minutes.
2. Meanwhile, prep the veggies. Thinly slice the jalapeno. Using a vegetable peeler, make thin ribbons of carrot.
3. Make the sauce. In a small bowl, mix yogurt with sriracha and lime. Cut the baguette into about 6 inch pieces. Cut those pieces in half horizontally.
4. Plate the sandwich. Spread about 1 TBSP of sauce on baguette. Place slices of carrot, jalapeno and some cilantro on inside bottom of baguette. Place 3 meatballs on top. Repeat for each sandwich. Serve and enjoy!

Baharat turkey rolls

Succulent, aromatic meat with melting cheese and crispy bacon.

Ingredients

4 turkey steaks
8 thin slices bacon
100g feta cheese, crushed
4 tbs baharat* seasoning
¼ tsp salt
2 tbs olive oil
2 tbs butter
2 cloves garlic, crushed
* Turkish baharat spice mix:
2 tbs ground black pepper
2 tbs ground cumin
1 tbs ground coriander
1 tbs chopped dried mint leaves
1 tbs garlic (granules)
1 tsp nutmeg, grated
½ tsp ground cardamom
Pinch of ground cinnamon

Preparation

1. Flatten the steaks carefully with a meat mallet.
2. Place 2 slices of bacon on each steak, sprinkle with feta cheese.
3. Roll the steak into a roll and secure with a metal or wooden toothpicks.
4. Mix baharat and salt. Coat the rolls with the baharat on all sides.
5. Very briefly sauté the garlic in a mixture of oil and butter (to infuse it with the garlic aroma), Take the garlic out of the fat.
6. Sauté rolls in the oil and butter mixture for about 5 minutes on each side or until done.
7. Before serving take toothpicks out of the meat.
8. Combine all the ingredients together till well mixed. Store in an airtight jar and keep away from direct sunlight.
9. Serve with the roasted cauliflower.

Bacon Wrapped Chicken With Mushrooms

You can use more chicken breasts for more servings, just remember 1 slice of bacon to 1 chicken breast.

Ingredients

4  Chicken Breasts,  Boneless and Skinless
4  Slices of  Bacon
1 pound  Fresh  Mushrooms
8 ounces pkgs. Monteray  Jack Cheese,  sliced
1/2 c.Italian dressing

Preparation

1. Marinate  chicken in italian  dressing  for at least an hour but up to 24 hours.
2. Preheat oven  to 350 degrees.
3. Wrap  bacon around each chicken breast and lay in casserole  dish.
4. Top  with  sliced  cheese and mushrooms.
5. Bake  for about 25 minutes or until golden  brown.

Bacon Chicken Thighs

We all have staples in our kitchen, and bacon is one ingredient that is never missing. I believe that everything tastes better with bacon. And here is a recipe just to prove that point.

Crispy chicken thighs with mushrooms, cream,  bacon, and lemon. Where should I start to describe this dish?   and did I mention you will be using only one pan to make this incredible dish? Yes! That is what I love the most, less cleaning in the kitchen.

Ingredients

4 slices thick bacon
4 large bone-in, skin-on chicken thighs
salt and pepper
1 small red onion, peeled and finely chopped
8 large white caps mushrooms, stem removed and sliced
2 garlic cloves, peeled and minced
¾ cup sodium-free chicken stock
¾ cup heavy cream
â…“ cup of grated parmesan cheese
1 small bunch of fresh thyme
juice of ½ lemon
fresh parsley for garnish (optional)

Preparation

1. In a large skillet over medium heat, cook the bacon until crispy, about 8 minutes. Drain the slices over a paper towel-lined plate and reserve about 2 tablespoons of the fat rendered in the skillet
2. Season generously with salt and pepper the chicken. Increase the heat to medium-high, then add the chicken, skin-side down. Cook until golden, about 5 -7 minutes per side. Skin needs to be crispy golden. Remove the chicken from the skillet and set aside.
3. Add onions and cook until soft. Stir in the mushrooms and season with salt and pepper. Cook until golden, about 5 minutes. Stir in garlic and then the chicken stock, cream, parmesan cheese, thyme and lemon juice. Bring mixture to a simmer and cook for another 5 minutes.
4. Return the chicken to the skillet and simmer until chicken is cooked through, about 10 more minutes more. Chop the bacon and add it to the sauce.
5. Garnish with fresh thyme or chopped parsley.
