Veggie Pizza with Tomatoes

Ingredients:
Pizza Dough:

2 ¼ teaspoons active dry yeast
1 ½ cups warm water (110°F)
1 tablespoon sugar
3 ½ to 4 cups all-purpose flour
2 tablespoons olive oil
1 ½ teaspoons salt
Pizza Sauce:

1 cup tomato sauce
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon sugar
Salt and pepper to taste
Toppings:

2 cups shredded mozzarella cheese
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1 bell pepper (any color), thinly sliced
1 cup baby spinach
1 cup sliced mushrooms
¼ cup sliced black olives
Fresh basil leaves for garnish
Red pepper flakes (optional)
Instructions:
Prepare the Pizza Dough:

In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5 minutes until it becomes frothy.
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
Mix until a dough forms. Knead on a floured surface for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Prepare the Pizza Sauce:

In a small saucepan, heat a little olive oil over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Add the tomato sauce, dried oregano, dried basil, sugar, salt, and pepper. Simmer for about 10 minutes, stirring occasionally. Set aside to cool.
Assemble the Pizza:

Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up.
Punch down the risen dough and divide it into two equal portions. Roll out each portion on a floured surface into your desired pizza shape (round or rectangular).
Transfer the rolled-out dough to a piece of parchment paper or a lightly floured pizza peel if using a pizza stone.
Spread a thin layer of the prepared pizza sauce over the dough, leaving a small border around the edges.
Sprinkle a generous layer of shredded mozzarella cheese over the sauce.
Arrange the cherry tomato halves, red onion slices, bell pepper slices, baby spinach, sliced mushrooms, and black olives evenly over the cheese.
Bake the Pizza:

If using a pizza stone, carefully transfer the pizza (with parchment paper) onto the preheated stone. If using a baking sheet, place the pizza directly on the sheet.
Bake for 12-15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
Garnish and Serve:

Remove the pizza from the oven and let it cool for a couple of minutes.
Garnish with fresh basil leaves and a sprinkle of red pepper flakes if desired.
Slice and serve hot.
