Vegetable Pizza with Cheddar Cheese and Queso Blanco
Ingredients:
For the Pizza Dough:
2 ¼ teaspoons (1 packet) active dry yeast
1 teaspoon sugar
1 ¼ cups warm water (about 110°F/45°C)
3 cups all-purpose flour
1 teaspoon salt
2 tablespoons olive oil
For the Toppings:
1 cup marinara sauce
1 cup shredded cheddar cheese
1 cup crumbled Queso Blanco cheese
1 cup sliced bell peppers (red, green, yellow)
1 cup sliced mushrooms
1 cup sliced red onions
1 cup sliced black olives
1 tablespoon olive oil
Salt and pepper to taste
Fresh basil leaves for garnish (optional)
Instructions:
1. Prepare the Pizza Dough:
In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until foamy.
In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
Stir until a dough begins to form.
Turn the dough onto a floured surface and knead for 5-7 minutes until smooth and elastic.
Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour or until it is doubled in size.
2. Preheat the Oven:
Preheat your oven to 450°F (230°C). If you have a pizza stone, place it in the oven while preheating.
3. Prepare the Toppings:
In a skillet, heat one tablespoon of olive oil over medium heat.
Add sliced bell peppers, mushrooms, and red onions. Sauté for about 5-7 minutes until slightly softened. Season with salt and pepper to taste.
Remove from heat and set aside.
4. Roll out the Dough:
Once the dough has doubled, punch it down and divide it into two equal portions.
Roll out each portion on a lightly floured surface into your desired pizza crust shape (round or rectangular) and thickness.
5. Assemble the Pizza:
Place the rolled-out dough onto a pizza pan or parchment-lined baking sheet.
Spread marinara sauce evenly over the dough, leaving a small border around the edges.
Sprinkle shredded cheddar cheese and crumbled Queso Blanco cheese over the sauce.
Arrange the sautéed vegetables and sliced black olives over the cheese.
6. Bake the Pizza:
Carefully transfer the assembled pizza to the preheated oven or pizza stone.
Bake for 12-15 minutes until the crust is golden brown and the cheese is bubbly and melted.
7. Serve:
Remove the pizza from the oven and let it cool for a few minutes.
Garnish with fresh basil leaves if desired.
