Pork Chops with Rosemary and Roasted Baby Potatoes
Ingredients:
For the Pork Chops:
4 bone-in pork chops (about 1 inch thick)
2 tablespoons olive oil
2 tablespoons fresh rosemary, finely chopped (or 2 teaspoons dried rosemary)
3 garlic cloves, minced
Salt and pepper, to taste
1 lemon (zest and juice)
1/2 cup chicken broth or white wine
For the Roasted Baby Potatoes:
1.5 pounds baby potatoes, halved
2 tablespoons olive oil
2 teaspoons fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)
3 garlic cloves, minced
Salt and pepper, to taste
Instructions:
Preheat the Oven:
Preheat your oven to 400°F (200°C).
Prepare the Pork Chops Marinade:
In a small bowl, mix 2 tablespoons olive oil, 2 tablespoons rosemary, minced garlic, lemon zest, lemon juice, salt, and pepper.
Rub the mixture all over the pork chops. Let them marinate at room temperature for about 15-30 minutes.
Roast the Potatoes:
While the pork chops are marinating, prepare the potatoes.
In a large bowl, toss the halved baby potatoes with 2 tablespoons olive oil, 2 teaspoons rosemary, minced garlic, salt, and pepper.
Spread the potatoes in a single layer on a baking sheet lined with parchment paper or foil.
Roast in the preheated oven for about 25-30 minutes, or until golden brown and crispy, turning them halfway through cooking.
Heat a large oven-safe skillet over medium-high heat.
Add a little olive oil to the skillet and sear the pork chops for about 3-4 minutes on each side until they are golden brown.
Pour in the chicken broth or white wine to deglaze the pan, scraping up any browned bits from the bottom.
Transfer the skillet to the oven and roast the pork chops for about 10-12 minutes, or until they reach an internal temperature of 145°F (63°C).
Rest the Pork Chops:
Remove the pork chops from the oven and let them rest for 5 minutes before serving. This helps the juices redistribute and keeps the meat tender and moist.
Serve:
Serve the pork chops alongside the roasted baby potatoes. Garnish with additional fresh rosemary if desired.
Tips:
Ensure the pork chops are of similar thickness for even cooking.
If you prefer a stronger garlic flavor, add more minced garlic to the marinade and the potatoes.
For extra crispiness, you can broil the potatoes for the last 2-3 minutes of cooking.
