Ingredients:

2 cups Arborio rice (or any short-grain rice suitable for paella)
1 lb large shrimp or prawns, peeled and deveined
1 onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup frozen peas
4 cups chicken or vegetable broth
1 teaspoon smoked paprika
1/2 teaspoon saffron threads (optional, but highly recommended for authentic flavor)
1/4 cup chopped fresh parsley
1 lemon, cut into wedges
Salt and pepper to taste
Olive oil for cooking
Instructions:

Prepare the Ingredients:
Rinse the rice under cold water until the water runs clear. Drain and set aside.
If using saffron threads, soak them in 2 tablespoons of warm water for about 10 minutes.
Season the shrimp or prawns with salt, pepper, and a sprinkle of smoked paprika.

Sauté the Aromatics:
Heat a large paella pan or skillet over medium heat and add a drizzle of olive oil.
Sauté the onion and garlic until soft and fragrant, about 2-3 minutes.

Add the diced bell peppers and continue cooking for another 2-3 minutes until they begin to soften.

Add the Rice:
Stir in the Arborio rice and coat it with the aromatics and oil, toasting it slightly for about 2 minutes.

Add the Liquid:
Pour in the chicken or vegetable broth, along with the soaked saffron threads and their soaking water (if using). Stir well to combine.

Season with salt, pepper, and smoked paprika according to your taste.

Cook the Paella:
Bring the mixture to a simmer, then reduce the heat to low. Cover the pan with a lid or aluminum foil and let it cook for about 15-20 minutes, or until the rice is almost tender and most of the liquid is absorbed.

Add the Shrimp and Peas:
Arrange the seasoned shrimp or prawns on top of the rice mixture, then scatter the frozen peas evenly over the pan.

Cover the pan again and cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Finish and Serve:
Once the shrimp are cooked, remove the lid and sprinkle chopped fresh parsley over the paella.

Squeeze lemon wedge

s over the dish for an extra burst of flavor.
