Italian Shrimp Salad Recipe
Ingredients:
Shrimp:
1 lb (450 g) large shrimp, peeled and deveined
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper, to taste
Juice of 1 lemon
Salad:
4 cups mixed salad greens (arugula, spinach, and radicchio)
1 cup cherry tomatoes, halved
1 small red onion, thinly sliced
1/2 cup Kalamata olives, pitted and halved
1/2 cup cucumber, thinly sliced
1/4 cup fresh basil leaves, chopped
1/4 cup fresh parsley, chopped
1/4 cup shaved Parmesan cheese
Dressing:
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 clove garlic, minced
Salt and pepper, to taste
Instructions:
Prepare the Shrimp:
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side or until the shrimp are pink and opaque.
Squeeze the juice of one lemon over the shrimp and toss to coat.
Remove the shrimp from the skillet and set aside to cool.
Make the Dressing:
In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.
Assemble the Salad:
In a large salad bowl, combine the mixed salad greens, cherry tomatoes, red onion, Kalamata olives, cucumber, basil, and parsley.
Add the cooked shrimp to the salad.
Dress the Salad:
Pour the dressing over the salad and toss gently to combine.
Top with shaved Parmesan cheese.
Serve:
Serve the salad immediately, ensuring each serving gets a good mix of shrimp and vegetables.
