Homemade Classic Apple Pie:

Ingredients

For the crust:
– 2 1/2 cups all-purpose flour
– 1 cup (2 sticks) unsalted butter, chilled and cut into small cubes
– 1 teaspoon salt
– 1 tablespoon granulated sugar
– 6-8 tablespoons ice water

For the filling:
– 6-7 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
– 1/2 cup granulated sugar
– 1/4 cup packed brown sugar
– 2 tablespoons all-purpose flour
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1 tablespoon lemon juice
– 1 tablespoon unsalted butter, cut into small pieces

For assembly:
– 1 egg, beaten (for egg wash)
– Granulated sugar (for sprinkling)

**Instructions:**

1. **Prepare the crust:**
– In a large mixing bowl, combine the flour, salt, and sugar. Add the chilled butter cubes.
– Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
– Gradually add ice water, 1 tablespoon at a time, mixing with a fork until the dough just holds together when pinched.
– Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

2. **Prepare the filling:**
– In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.

3. **Preheat the oven:**
– Preheat your oven to 425°F (220°C). Place a baking sheet in the oven to preheat as well.

4. **Roll out the dough:**
– On a lightly floured surface, roll out one disk of dough into a circle large enough to line a 9-inch pie dish. Transfer the dough to the pie dish, gently pressing it into the bottom and up the sides.

5. **Add the filling:**
– Pour the apple filling into the prepared pie crust. Dot the top with small pieces of butter.

6. **Top with the second crust:**
– Roll out the second disk of dough into a circle large enough to cover the pie. Place it over the filling. Trim any excess dough and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.

7. **Bake the pie:**
– Brush the top crust with beaten egg and sprinkle with granulated sugar for a golden finish.
– Place the pie on the preheated baking sheet in the oven. Bake for 45-55 minutes, or until the crust is golden brown and the filling is bubbly.
– If the crust begins to brown too quickly, cover the edges with foil and continue baking.

8. **Cool and serve:**
– Allow the pie to cool on a wire rack for at least 1 hour before serving. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
