Healthy Springtime Creamy White Bean Dip with Pesto:
Perfect light creamy dip for a summer and spring day.
Ingredients:
1 can (15 oz) white beans (such as cannellini or great northern), drained and rinsed
2 cloves garlic, minced
2 tablespoons lemon juice
2 tablespoons olive oil
Salt and pepper to taste
1/4 cup pesto sauce (store-bought or homemade)
Instructions:
In a food processor or blender, combine the white beans, minced garlic, lemon juice, olive oil, salt, and pepper.
Blend until smooth and creamy, scraping down the sides of the processor or blender as needed.
Once the mixture is smooth, transfer it to a serving bowl.
Stir in the pesto sauce until well combined. Adjust the amount of pesto to your taste preferences.
Taste and adjust seasoning if needed, adding more salt, pepper, or lemon juice if desired.
Serve the white bean dip with pesto and your favorite dippers, such as pita chips, crackers, or fresh vegetables.
