Ingredients
- 1 pound medium shrimp, peeled and deveined
- 4 tablespoons olive oil (divided)
- 5 garlic cloves, minced (divided)
- 2 teaspoons smoked paprika (divided)
- 1/2 teaspoon dried oregano
- 1 shallot, chopped fine
- 1 bay leaf
- crushed red pepper flakes, to taste
- 1 tablespoon tomato paste
- 1/4 cup dry white wine
- 1 can (14 ounces) diced tomatoes (do not drain)
- 2 cans (15 ounces each) white beans, rinsed and drained
- 1/4 cup low-sodium chicken broth
- chopped flat-leaf parsley or fresh basil, for garnish
Here’s how to make it:
- Put the cleaned shrimp into a bowl with half the garlic, 2 tablespoons olive oil, the oregano, 1 teaspoon of smoked paprika, and salt and pepper, to taste. Toss to coat.
- Heat 2 tablespoons of olive oil in an ovenproof skillet over medium heat. Add the shallot and cook, stirring, about 2 minutes. Add the remaining garlic, crushed red pepper flakes, to taste, and bay leaf. Cook, stirring, about 2 minutes. Add the tomato paste and cook, stirring, about 2 minutes. Add the white wine and cook, stirring up any brown bits from the bottom of the pan, for about 1 minute. Add the tomatoes, beans, broth and remaining paprika. Bring to a gentle boil and cook until thickened, about 5 to 8 minutes. Season with salt and pepper.
- Preheat the broiler. Put the shrimp over the top of the bean mixture in a single layer. Broil until shrimp are cooked through, about 4 minutes (this will vary depending on size of shrimp). Remove the pan from the oven and stir. Garnish with chopped fresh parsley or basil.
