Grilled Halibut with Fresh Vegetables
Ingredients:
4 halibut fillets (about 6 ounces each)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon lemon zest
2 tablespoons lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
2 bell peppers (any color), sliced
1 zucchini, sliced
1 yellow squash, sliced
1 red onion, sliced
2 tablespoons chopped fresh parsley (for garnish)
Instructions:
Preheat the Grill:

Preheat your grill to medium-high heat.
Prepare the Halibut:

In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, dried oregano, salt, and pepper.
Place the halibut fillets in a shallow dish and pour the marinade over them. Make sure the fillets are evenly coated. Let them marinate for about 15-20 minutes while you prepare the vegetables.
Prepare the Vegetables:

In a large bowl, toss together the sliced bell peppers, zucchini, yellow squash, and red onion with a drizzle of olive oil and a pinch of salt and pepper.
Grill the Vegetables:

Place the vegetables in a grill basket or directly on the grill grates. Grill them for about 8-10 minutes, or until they are tender and have nice grill marks, stirring occasionally. Once done, transfer them to a serving platter and cover to keep warm.
Grill the Halibut:

Remove the halibut fillets from the marinade and shake off any excess. Place them on the grill and cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.
Serve:

Once the halibut is cooked through, remove it from the grill and place it on top of the grilled vegetables. Garnish with chopped fresh parsley and an extra squeeze of lemon juice if desired.
