Fresh Fruit Freezer Pops with Chocolate Drizzle (Low Sugar)

Ingredients:

For the Freezer Pops:

  • 2 cups fresh fruit (such as strawberries, blueberries, mango, or kiwi)
  • 1 cup Greek yogurt (plain, unsweetened)
  • 1 tablespoon honey or maple syrup (optional, adjust to taste)
  • 1/2 cup water or coconut water

For the Chocolate Drizzle:

  • 1/2 cup dark chocolate (70% cocoa or higher), chopped
  • 1 teaspoon coconut oil

Equipment:

  • Blender or food processor
  • Freezer pop molds and sticks
  • Small saucepan or microwave-safe bowl
  • Baking sheet lined with parchment paper (for drizzling chocolate)

Instructions:

1. Prepare the Fruit Mixture:

  1. Wash and prepare the fresh fruit. If using larger fruits like strawberries or mangoes, chop them into smaller pieces.
  2. In a blender or food processor, combine the fruit, Greek yogurt, honey or maple syrup (if using), and water or coconut water. Blend until smooth. You can leave some small chunks of fruit if you prefer a more textured pop.

2. Fill the Molds:

  1. Pour the fruit mixture into freezer pop molds, leaving a little space at the top to allow for expansion as they freeze.
  2. Insert the sticks and freeze for at least 4-6 hours, or until completely solid.

3. Prepare the Chocolate Drizzle:

  1. In a small saucepan, melt the dark chocolate and coconut oil over low heat, stirring constantly until smooth. Alternatively, you can melt the chocolate and coconut oil in a microwave-safe bowl in 20-second intervals, stirring between each interval until melted and smooth.
  2. Let the melted chocolate cool slightly before drizzling.

4. Drizzle the Pops:

  1. Once the freezer pops are fully frozen, remove them from the molds. If they are difficult to remove, run the molds under warm water for a few seconds.
  2. Place the pops on the prepared baking sheet lined with parchment paper.
  3. Use a spoon or a small piping bag to drizzle the melted chocolate over the frozen pops. The chocolate will harden quickly upon contact with the cold pops.

5. Serve and Enjoy:

  1. Once the chocolate drizzle has set, the pops are ready to enjoy immediately or can be returned to the freezer for later. Store them in an airtight container in the freezer to maintain freshness.

Tips:

  • For a more indulgent treat, consider adding some finely chopped nuts or shredded coconut on top of the chocolate drizzle before it sets.
  • You can mix and match different fruits to create a variety of flavors in one batch.
