Delicious Recipe for Moist Snickerdoodle Zucchini Bread

Ingredients:

For the Bread:

2 cups grated zucchini (about 2 medium-sized zucchinis)
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup unsalted butter, melted
1/2 cup vegetable oil
3 large eggs
2 teaspoons vanilla extract
For the Snickerdoodle Topping:

2 tablespoons granulated sugar
1 teaspoon ground cinnamon

Preheat your oven to 350°F (175°C)—grease and flour two 9×5-inch loaf pans.

Grate the zucchinis and place them on a clean kitchen towel. Squeeze out excess moisture from the zucchini.

Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a large bowl.

In another bowl, beat the granulated sugar, brown sugar, melted butter, vegetable oil, eggs, and vanilla extract until well combined.

Add the grated zucchini to the wet ingredients and mix well.

Gradually add the dry ingredients to the wet ingredients, stirring until combined. Be careful not to overmix.

For the snickerdoodle topping, mix the 2 tablespoons of granulated sugar and 1 teaspoon of cinnamon in a small bowl.

Pour half of the zucchini batter into the prepared loaf pans. Sprinkle half of the snickerdoodle topping over the batter.

Add the remaining zucchini batter on top and sprinkle the remaining snickerdoodle topping.

Bake in the oven for 50-60 minutes or until a toothpick inserted into the center comes clean.

Allow the bread to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
