Ingredients:
For the Pasta:

12 oz fettuccine pasta
Salt (for pasta water)
For the Sauce:

2 tablespoons olive oil
1 tablespoon butter
1 small onion, finely chopped
3 cloves garlic, minced
12 oz mushrooms (such as cremini or button), sliced
1/2 cup white wine (optional, can substitute with vegetable or chicken broth)
1 cup heavy cream
1 cup grated white cheddar cheese
1/2 cup grated Parmesan cheese
Salt and pepper to taste
1/4 teaspoon nutmeg (optional)
Fresh parsley, chopped (for garnish)
Instructions:
Cook the Fettuccine:

Bring a large pot of salted water to a boil.
Add the fettuccine and cook according to the package instructions until al dente.
Drain the pasta, reserving about 1 cup of the pasta cooking water. Set aside.
Prepare the Mushroom and White Cheddar Sauce:

In a large skillet, heat the olive oil and butter over medium heat.
Add the chopped onion and sauté until it becomes translucent, about 3-4 minutes.
Add the minced garlic and cook for another 1-2 minutes until fragrant.
Add the sliced mushrooms and cook until they are browned and have released their moisture, about 5-7 minutes.
If using, pour in the white wine and let it simmer until it reduces by half, about 2-3 minutes.
Reduce the heat to low, and pour in the heavy cream. Stir to combine and let it simmer for 2-3 minutes.
Gradually add the grated white cheddar and Parmesan cheese, stirring continuously until the cheese is completely melted and the sauce is smooth.
Season with salt, pepper, and nutmeg (if using). Adjust seasoning to taste.
Combine and Serve:

Add the cooked fettuccine to the skillet with the sauce. Toss to combine, ensuring the pasta is well coated with the sauce.
If the sauce is too thick, add a bit of the reserved pasta cooking water to reach your desired consistency.
Serve immediately, garnished with freshly chopped parsley.
