Crispy Calamari Recipe
Ingredients:

For the Calamari:

1 pound calamari (squid), cleaned and cut into rings
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional, for a bit of heat)
1 cup cold sparkling water (or club soda)
Vegetable oil, for frying
For the Dipping Sauce:

1/2 cup mayonnaise
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley
1 clove garlic, minced
Salt and pepper, to taste
For Garnish:

Lemon wedges
Fresh parsley, chopped
Instructions:
Prepare the Dipping Sauce:

In a small bowl, combine the mayonnaise, lemon juice, chopped parsley, and minced garlic. Mix well and season with salt and pepper to taste. Cover and refrigerate until ready to serve.
Prepare the Calamari:

Pat the calamari rings dry with paper towels to remove any excess moisture. This will help them get crispy when fried.

In a large bowl, whisk together the flour, cornstarch, baking powder, paprika, garlic powder, salt, black pepper, and cayenne pepper.
Gradually add the cold sparkling water, whisking until the batter is smooth. The batter should be slightly thick but still pourable.
Fry the Calamari:

In a large, heavy-bottomed pot or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C).
Dip the calamari rings into the batter, allowing any excess to drip off.
Carefully add the battered calamari rings to the hot oil, frying in batches to avoid overcrowding the pot. Fry until golden brown and crispy, about 2-3 minutes per batch.
Use a slotted spoon to remove the calamari from the oil and transfer to a plate lined with paper towels to drain excess oil.
Serve:

Arrange the crispy calamari on a serving platter. Garnish with lemon wedges and chopped fresh parsley.
Serve immediately with the prepared dipping sauce on the side.
