Coconut macaroons with a lemon twist that is gluten-free and low-carb:

Lemon Coconut Macaroons (Gluten-Free, Low-Carb)
Ingredients:
3 cups unsweetened shredded coconut
1/2 cup coconut flour
1/2 cup erythritol or any preferred low-carb sweetener
1/4 teaspoon salt
4 large egg whites
1 teaspoon vanilla extract
1 tablespoon lemon zest (from about 1-2 lemons)
1 tablespoon fresh lemon juice
Instructions:
Preheat the Oven:

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients:

In a large bowl, combine the shredded coconut, coconut flour, erythritol, and salt. Mix well.
Prepare Wet Ingredients:

In a separate bowl, whisk the egg whites until they are frothy. Add the vanilla extract, lemon zest, and fresh lemon juice. Mix until well combined.
Combine Ingredients:

Pour the wet mixture into the dry mixture. Stir until all ingredients are fully incorporated and the mixture is sticky. If the mixture is too dry, you can add a little more lemon juice or water, a teaspoon at a time, until it holds together when pressed.

Shape the Macaroons:

Using a small cookie scoop or a tablespoon, scoop out portions of the mixture and shape them into small mounds or balls. Place them on the prepared baking sheet, spacing them about 1 inch apart.
Bake:

Bake in the preheated oven for 15-20 minutes, or until the macaroons are golden brown around the edges.
Cool:

Remove from the oven and let the macaroons cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
