Cheesy Quinoa and Black Bean Stuffed Peppers

Ingredients:

  • 4 large bell peppers, any color
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh cilantro or parsley for garnish (optional)
  • Sour cream or salsa for serving (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the outside of the peppers with olive oil and place them in a baking dish.
  3. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the quinoa is cooked and the liquid is absorbed.
  4. In a large mixing bowl, combine cooked quinoa, black beans, corn, diced tomatoes, half of the shredded cheddar cheese, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well.
  5. Stuff each bell pepper with the quinoa mixture, pressing down gently to pack the filling.
  6. Top each stuffed pepper with the remaining shredded cheddar cheese.
  7. Cover the baking dish with aluminum foil and bake in the oven for 25-30 minutes or until the peppers are tender.
  8. Remove the foil and bake for 5-10 minutes or until the cheese is melted and bubbly.
  9. Garnish with fresh cilantro or parsley if desired.
  10. Serve the stuffed peppers hot, with optional sides of sour cream or salsa.
