Caldo Verde Soup

Ingredients:

  • 1/4 cup olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound (about four medium-sized) potatoes, peeled and diced
  • 1/2 pound chorizo sausage, sliced (optional)
  • 6 cups chicken or vegetable broth
  • 1 bunch of kale, stems removed and leaves thinly sliced
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • Pinch of red pepper flakes (optional)
  • Crusty bread for serving

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic to the pot and sauté for 1-2 minutes until fragrant.
  3. If using chorizo, add the sliced sausage to the pot and cook until browned about 5 minutes.
  4. Stir in the diced potatoes and cook for another 3-4 minutes.
  5. Pour in the chicken or vegetable broth, and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer until the potatoes are tender, about 15-20 minutes.
  6. Using a potato masher or the back of a spoon, mash some potatoes in the pot to thicken the soup slightly.
  7. Add the sliced kale to the pot and simmer for 5-7 minutes until the kale is tender but still vibrant.
  8. Season the soup with salt, pepper, paprika, and red pepper flakes (if using). Adjust the seasoning to taste.
  9. Serve the Caldo Verde hot, accompanied by slices of crusty bread.
  10. Enjoy the comforting and flavorful Caldo Verde soup!
