Almond Flour Pancakes Recipe by CWEB
Ingredients:
1 cup almond flour
2 large eggs
1/4 cup almond milk (or any milk of your choice)
1 tbsp honey or maple syrup (optional for sweetness)
1 tsp vanilla extract
1/2 tsp baking powder
1/8 tsp salt
1 tbsp coconut oil or butter (for cooking)
Instructions:
Prepare the Batter:
In a medium bowl, whisk together the eggs, almond milk, honey (if using), and vanilla extract until well combined.
In a separate bowl, mix the almond flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until you have a smooth batter.
Preheat the Pan:
Heat a non-stick skillet or griddle over medium heat.
Add a small amount of coconut oil or butter to the skillet and allow it to melt.
Cook the Pancakes:
Pour about 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes.
Carefully flip the pancake and cook for an additional 1-2 minutes on the other side, until golden brown and cooked through.
Repeat with the remaining batter, adding more oil or butter to the skillet as needed.
Serve:
Serve the pancakes warm with your favorite toppings such as fresh berries, sliced bananas, nuts, syrup, or a dollop of yogurt.
